(This is perhaps one of my favorite South Beach Diet recipes. I made mine without the vermouth/sherry, and it was delicious. The fish takes on what I can only describe as a Pan-Asian flavor. YUMMY! And yes, my son liked the fish.)
Orange Roughy In Scallion and Ginger Sauce
1/3 C. dry sherry or vermouth
3 T. low-sodium soy sauce
2 tsp. sesame oil
1/4 C. finely chopped green onion
1 tsp. freshly grated ginger
1 tsp. finely chopped garlic
2 orange roughy fillets (1 lb.)
Preheat the oven to 400 degrees Fahrenheit. Mix the sherry/vermouth, soy sauce, sesame oil, onion, ginger and garlic in a small bowl.
Place fish fillets in an overproof casserole dish. Drizzle the marinade over the fish and bake for 12 minutes, or until fish flakes easily.
Cod, sole or flounder may be substituted for the orange roughy.
Serves 2
