
This is an easy-to-make caesar salad from the people at Cooking Light. I like this one because the dressing doesn't call for eggs.
In a large salad bowl, whisk together:
3 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
2 teaspoons Worcestershire sauce
2 teaspoons Dijon mustard
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1 garlic clove, crushed

Add:
11 C. of torn romaine lettuce (about 1 1/4 pound)
1 1/2 cups plain croutons
1/2 cup (2 ounces) grated fresh Parmesan cheese
Toss the salad lightly when ready to serve.
